About the Workshop

This workshop is a traditional skills workshop that uses historical and reliable ways of preserving surplus food or ingredients for long term ‘shelf stable’ storage. You will also take home a few jars of canned, fermented and/or pickled produce which is included in the price. After the workshop all notes, techniques, recipes and photos will be made accessible to you via a link which will be sent via email. 

The workshop content is also seasonal so the recipes and ingredients will change depending on the season.

This workshop is fantastic for those new or just starting out or for those who want to refresh or gain new confidence in preserving food. We offer a ‘next level’ preservation course in addition to this one.

“Why so cheap?”  I hear you ask? Well… Our workshops are designed to be affordable, without compromising on content or quality. We want everyone to be able to access all of our workshops without it being a major expense. Which is why we run a minimum attendance of 4 people for this workshop.

What’s included?

Canning:

Learn to “can” or Jar food for long term storage. This includes meat, vegetables and home made “ready meals” Making them shelf stable and safe. 

We will also talk about modern techniques such as pressure canning (Not available for sale in france) and how to can without specialist equipment. 

Fermentation

We will look at techniques that focus primarily on fermentation. We will go beyond just making kimchi and learn to ferment vegetables etc.

Pickling

Learn what is required to pickle food for an alternative and delicious way of preserving food.

Alternative methods: (Freeze drying, dehydration etc.) 

We will look briefly at these techniques to provide a well rounded look at stabilising food.

Location:

The workshop will take place at ‘Le Petit Verger’ In the village of Bonnes 16390 (Precise information will be emailed after booking)

Additional Information:

Please come dressed for the weather forecasted for the day. Shade and shelter are available, so the workshops will go ahead whatever the weather but we will endeavour to be outside if possible. 

Lunch: We will have a shared lunch (we all sit together) so please bring with you a dish for yourself and if you can something to share. Plates, cutlery and cups will be provided.

Tea, coffee and water provided.
